Ingredients

Focaccia Dough
  • 3 ½ cups all-purpose flour
  • 2 ¼ tsp active dry yeast 1 packet
  • ½ cup warm milk 110°F / 43°C
  • ¼ cup granulated sugar
  • ½ tsp salt
  • 2 eggs room temperature
  • ½ cup unsalted butter softened
  • ½ cup fruit jam
  • Powdered sugar for dusting
  • 1 cup glaze ingredients optional: mix powdered sugar and milk

Equipment

  • Mixing bowls
  • Baking sheet or pan
  • Wire rack
  • Hand mixer or stand mixer

Method

  1. In a small bowl, combine warm milk, 1 tsp sugar, and yeast. Let sit 5–10 minutes until foamy.
  2. Combine flour, remaining sugar, and salt in a large bowl. Add eggs, butter, and yeast mixture. Mix to form soft dough.
  3. Knead dough 8–10 minutes on floured surface until smooth and elastic.
  4. Place dough in greased bowl, cover, and let rise 1–1.5 hours until doubled.
  5. Punch down dough, press into greased baking pan about 1 inch thick.
  6. Make shallow indentations in dough and fill with jam. Optional: fold edges over jam slightly.
  7. Cover dough and let rise 20–30 minutes.
  8. Bake at 375°F (190°C) for 20–25 minutes until golden.
  9. Cool slightly, dust with powdered sugar or drizzle glaze.
  10. Slice and serve warm or at room temperature.

Notes

Avoid overfilling jam to prevent leakage during baking. Use room temperature ingredients for best rise.
