Method
- Preheat oven to 375°F (190°C) and grease baking dish.
- Season chicken breasts with olive oil, salt, pepper, and smoked paprika.
- Mix cream cheese, cheddar, Monterey Jack, garlic powder, diced jalapeños, and half of the green onions.
- Spread mixture over each chicken breast.
- Top with jalapeño slices and bake for 30–35 minutes.
- Add crumbled bacon and bake 3 minutes more.
- Garnish with remaining green onions and serve hot.
Notes
For extra spice, leave some jalapeño seeds or add a diced serrano pepper.
