Ingredients
  

Chicken Base
  • 4 chicken breasts boneless, skinless
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika
Popper Topping
  • 8 oz cream cheese softened
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack or Pepper Jack shredded
  • 3 jalapeños diced
  • 2 green onions sliced
  • 1 tsp garlic powder
Toppings
  • 4 slices bacon cooked and crumbled
  • extra jalapeño slices for garnish

Method
 

  1. Preheat oven to 375°F (190°C) and grease baking dish.
  2. Season chicken breasts with olive oil, salt, pepper, and smoked paprika.
  3. Mix cream cheese, cheddar, Monterey Jack, garlic powder, diced jalapeños, and half of the green onions.
  4. Spread mixture over each chicken breast.
  5. Top with jalapeño slices and bake for 30–35 minutes.
  6. Add crumbled bacon and bake 3 minutes more.
  7. Garnish with remaining green onions and serve hot.

Notes

For extra spice, leave some jalapeño seeds or add a diced serrano pepper.
