Ingredients
  

  • 12 oz beef sirloin or ribeye thinly sliced
  • 1 cup bell peppers sliced
  • 1/2 cup onion sliced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 2 cups shredded mozzarella cheese
  • 2 oz cream cheese softened
  • 3/4 cup almond flour
  • 2 eggs large

Method
 

  1. Cook beef in olive oil until just done; remove from skillet.
  2. Sauté peppers, onions, and garlic until softened.
  3. Melt mozzarella and cream cheese together.
  4. Mix in almond flour and eggs to form dough.
  5. Roll dough into a rectangle and add filling.
  6. Roll into a log, slice, and arrange on baking sheet.
  7. Bake until golden and set.

Notes

Let rolls cool slightly before slicing for best structure.
