  • 12 oz pasta
  • 2 cups artichoke hearts
  • 1 fennel bulb sliced
  • 3 tbsp olive oil
  • 4 tbsp butter
  • 3 cloves garlic
  • 1 lemon zested and juiced
  • 0.5 cup Parmesan cheese
  • 0.25 cup parsley

Method
 

  1. Roast artichokes and fennel at 400°F until caramelized.
  2. Cook pasta and reserve water.
  3. Brown butter and add garlic.
  4. Add lemon and pasta, tossing with water.
