Main
  • 4 salmon fillets
  • 1 lb baby potatoes halved
  • 3 cups broccoli florets
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 lemon zested and juiced
  • salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Prepare a large baking sheet.
  2. Toss potatoes with olive oil, salt, and pepper. Roast for 20 minutes.
  3. Add broccoli to the baking sheet and roast 10 minutes more.
  4. Season salmon with salt and pepper.
  5. Melt butter with garlic, lemon zest, and juice.
  6. Add salmon to pan, spoon lemon butter over top, and roast 10–12 minutes.
  7. Garnish with parsley and serve immediately.

Notes

For extra crispiness, broil for 2 minutes at the end.
