Method
- Preheat oven to 350°F (175°C) and line pan with parchment.
- Mix oats, flour, brown sugar, baking soda, and salt.
- Add melted butter and vanilla; mix to crumb texture.
- Press two-thirds into pan and bake 10 minutes.
- Whisk eggs, sugar, flour, lemon juice, and zest.
- Pour filling over crust.
- Sprinkle remaining crumble on top.
- Bake 18–22 minutes until golden and set.
- Cool completely, chill, slice, and serve.
