Ingredients
  

Oat Crust & Topping
  • 1.5 cups rolled oats
  • 1.25 cups all-purpose flour
  • 0.75 cup brown sugar packed
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.75 cup unsalted butter melted
  • 1 tsp vanilla extract
Lemon Filling
  • 2 eggs large
  • 0.75 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 0.33 cup fresh lemon juice
  • 1 tbsp lemon zest

Equipment

  • Mixing bowls
  • 8x8 baking pan

Method
 

  1. Preheat oven to 350°F (175°C) and line pan with parchment.
  2. Mix oats, flour, brown sugar, baking soda, and salt.
  3. Add melted butter and vanilla; mix to crumb texture.
  4. Press two-thirds into pan and bake 10 minutes.
  5. Whisk eggs, sugar, flour, lemon juice, and zest.
  6. Pour filling over crust.
  7. Sprinkle remaining crumble on top.
  8. Bake 18–22 minutes until golden and set.
  9. Cool completely, chill, slice, and serve.

Notes

Chill before slicing for clean edges. Store refrigerated.
