Ingredients
  

Base and Crumble
  • 1.5 cups all-purpose flour
  • 1 cup rolled oats
  • 0.75 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.75 cup unsalted butter melted
Lemon Filling
  • 1 tbsp lemon zest
  • 0.75 cup lemon juice fresh
  • 2 eggs large
  • 0.25 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. Mix flour, oats, sugars, baking soda, and salt in a bowl.
  3. Stir in melted butter until crumbly.
  4. Press two-thirds into pan and bake 10 minutes.
  5. Whisk filling ingredients until smooth.
  6. Pour filling over crust and sprinkle remaining crumble.
  7. Bake 25–30 minutes until golden and set.
  8. Cool completely, chill, then slice and serve.

Notes

For cleaner slices, refrigerate before cutting. Add berries for variation.
