- Preheat oven to 350°F (175°C) and grease a baking dish.
- Mix oats, baking powder, poppy seeds, salt, and lemon zest in a bowl.
- Whisk eggs, milk, maple syrup, vanilla extract, melted butter, and lemon juice.
- Combine wet and dry ingredients until evenly mixed.
- Fold in blueberries gently.
- Pour mixture into baking dish and spread evenly.
- Bake for 35–40 minutes until set and lightly golden.
- Cool slightly before slicing and serving.
