Oatmeal Base
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tbsp poppy seeds
  • 0.5 tsp salt
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 2 eggs large
  • 1.5 cups milk
  • 0.33 cup maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp melted butter
  • 1 cup blueberries fresh or frozen

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Mix oats, baking powder, poppy seeds, salt, and lemon zest in a bowl.
  3. Whisk eggs, milk, maple syrup, vanilla extract, melted butter, and lemon juice.
  4. Combine wet and dry ingredients until evenly mixed.
  5. Fold in blueberries gently.
  6. Pour mixture into baking dish and spread evenly.
  7. Bake for 35–40 minutes until set and lightly golden.
  8. Cool slightly before slicing and serving.

Notes

Great for meal prep and can be stored in the refrigerator for up to 5 days.
