Ingredients
  

Burrito Bowls
  • 2 cups cooked rice white or brown
  • 2 cups black beans drained and rinsed
  • 1 cup corn fresh, canned, or roasted
  • 1 lb cooked chicken or beef seasoned
  • 1 cup salsa or pico de gallo
  • 1 avocado diced
  • 1 cup shredded lettuce
  • 1-2 diced tomatoes
  • fresh cilantro for garnish
  • lime wedges for serving

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Add cooked rice to each bowl, then top with warmed beans and corn.
  2. Cook seasoned chicken or beef and add to the bowls.
  3. Add salsa or pico de gallo, lettuce, tomatoes, avocado, and cilantro.
  4. Squeeze fresh lime juice over the bowls.
  5. Serve warm immediately.
