Loaded Chicken Tzatziki Bowls

Mediterranean-style rice bowls loaded with seasoned chicken, fresh vegetables, feta cheese, and creamy homemade tzatziki sauce.

Ingredients
  

Chicken
  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 0.5 cucumber grated and drained
  • 1 clove garlic
  • 1 tbsp lemon juice
  • 1 tbsp dill chopped
Bowls
  • 2 cups cooked rice
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber slices
  • 0.5 red onion thinly sliced
  • 0.5 cup feta cheese crumbled
  • 0.25 cup olives optional

Equipment

  • Mixing bowls

Method
 

  1. Mix paprika, garlic powder, oregano, salt, and pepper.
  2. Rub chicken with olive oil and coat with seasoning.
  3. Cook chicken 6–7 minutes per side until done.
  4. Rest chicken then slice into strips.
  5. Mix yogurt, cucumber, garlic, lemon juice, dill, olive oil, and salt to make tzatziki.
  6. Divide rice into bowls and top with chicken, vegetables, and feta.
  7. Drizzle with tzatziki sauce and garnish with herbs.
