Ingredients
  

Potatoes
  • 4 potatoes diced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp chili powder
  • salt and pepper to taste
Taco Meat
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
Toppings
  • 1 cup cheddar cheese shredded
  • 0.5 cup sour cream
  • 1 avocado diced
  • 0.25 cup green onions chopped
  • 0.25 cup cilantro chopped

Method
 

  1. Preheat oven to 425°F and line a baking sheet.
  2. Season and roast potatoes for 25–30 minutes until crispy.
  3. Cook ground beef in skillet until browned.
  4. Add spices and cook for additional 2–3 minutes.
  5. Assemble bowls with potatoes, meat, and toppings.

Notes

For extra crispiness, use an air fryer for the potatoes.
