Ingredients
  

Cheesecake Batter
  • 24 oz cream cheese room temperature
  • 1 cup granulated sugar
  • 4 eggs large
  • 1 cup heavy cream infused with Earl Grey tea
  • 2 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • 0.25 tsp salt
Blackberry Sauce
  • 2 cups blackberries
  • 0.25 cup sugar
  • 1 tbsp lemon juice

Method
 

  1. Infuse warm cream with Earl Grey tea and let cool.
  2. Beat cream cheese and sugar until smooth.
  3. Add eggs one at a time, mixing gently.
  4. Mix in infused cream, vanilla, salt, and flour.
  5. Bake at high heat until deeply caramelized with a jiggly center.
  6. Simmer blackberries, sugar, and lemon juice to make sauce.

Notes

Cheesecake will set more as it cools; center should remain soft.
