Ingredients
  

Cake Layers
  • 2.5 cups all-purpose flour
  • 1.5 cups sugar
  • 2.5 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 4 eggs large
  • 1 cup milk Earl Grey steeped
  • 4 Earl Grey tea bags for steeping
  • 2 tsp vanilla extract
Frosting
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 3 tbsp heavy cream
  • 1 tbsp vanilla bean paste

Method
 

  1. Warm milk and steep Earl Grey tea bags for 10 minutes; cool.
  2. Preheat oven to 350°F (175°C). Prepare cake pans.
  3. Whisk flour, sugar, baking powder, salt, and optional ground tea leaves.
  4. Beat butter and add eggs one at a time, then vanilla.
  5. Alternate adding dry ingredients and tea-infused milk.
  6. Bake 24–28 minutes, then cool completely.
  7. Beat butter, powdered sugar, cream, and vanilla bean paste to make frosting.
  8. Assemble cake with frosting between layers and over the top.

Notes

For stronger tea flavor, add 1 tbsp finely ground Earl Grey to the batter.
