Ingredients
  

Fries
  • 2 pounds frozen french fries or fresh cut potatoes
Toppings
  • 4 slices thick-cut bacon
  • 2 green onions chopped
Cheese Sauce
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1 cup sharp cheddar cheese shredded
  • 0.5 cup Monterey Jack cheese shredded
  • salt and pepper to taste

Method
 

  1. Preheat oven to 425°F (220°C). Cook bacon in large skillet until crispy, about 6-8 minutes. Chop into small pieces.
  2. Prepare french fries according to package directions until golden brown and crispy.
  3. Melt butter in medium saucepan over medium heat. Add flour and whisk constantly for 1-2 minutes to create roux.
  4. Gradually add milk, whisking constantly to prevent lumps. Cook until thickened, about 3-4 minutes.
  5. Remove from heat and gradually add shredded cheeses, stirring until smooth. Season with salt and pepper.
  6. Arrange hot fries on serving platter. Pour warm cheese sauce evenly over fries.
  7. Sprinkle chopped bacon and green onions over top. Serve immediately while hot.

Notes

For extra flavor, save some bacon fat to add to cheese sauce. Add jalapeños or hot sauce for heat. Best served immediately while fries are still crispy.
