Banana Cake
  • 2.5 cups all-purpose flour
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.5 cup unsalted butter softened
  • 0.25 cup neutral oil
  • 1.5 cups granulated sugar
  • 2 eggs large
  • 1 tbsp vanilla extract
  • 1.5 cups mashed ripe bananas
  • 0.75 cup buttermilk or sour cream
Cream Cheese Frosting
  • 12 oz cream cheese softened
  • 0.5 cup unsalted butter softened
  • 3.5 cups powdered sugar sifted
  • 1.5 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a 9x13-inch baking pan.
  2. Whisk flour, baking powder, baking soda, salt, and cinnamon in a bowl.
  3. Beat butter, oil, and sugar until light and fluffy.
  4. Add eggs one at a time, then vanilla.
  5. Mix in mashed bananas until combined.
  6. Alternate adding dry ingredients and buttermilk, mixing gently.
  7. Bake 35–40 minutes until a toothpick comes out clean. Cool completely.
  8. Beat cream cheese and butter, then add powdered sugar, vanilla, and salt.
  9. Frost cooled cake and slice to serve.

Notes

Use very ripe bananas for best flavor and moisture.
