Method
- Whisk chia seeds, coconut milk, sweetener, and vanilla in a bowl until combined.
- Let sit 5 minutes, then stir again to prevent clumps.
- Cover and refrigerate at least 4 hours or overnight until thick.
- Blend mango until smooth in a blender.
- Blend dragon fruit until smooth in a separate container.
- Layer or swirl chia pudding with mango and dragon fruit purées.
- Serve immediately or refrigerate until ready to eat.
Notes
For best texture, stir chia pudding twice during the first 10 minutes of soaking.
