Ingredients
  

  • 0.25 cup chia seeds
  • 1.5 cups coconut milk or milk of choice
  • 1 cup mango fresh, chopped
  • 1 cup dragon fruit fresh, chopped
  • 2 tbsp honey or maple syrup
  • 0.5 tsp vanilla extract optional

Method
 

  1. Whisk chia seeds, coconut milk, sweetener, and vanilla in a bowl until combined.
  2. Let sit 5 minutes, then stir again to prevent clumps.
  3. Cover and refrigerate at least 4 hours or overnight until thick.
  4. Blend mango until smooth in a blender.
  5. Blend dragon fruit until smooth in a separate container.
  6. Layer or swirl chia pudding with mango and dragon fruit purées.
  7. Serve immediately or refrigerate until ready to eat.

Notes

For best texture, stir chia pudding twice during the first 10 minutes of soaking.
