Ingredients
  

Carrots
  • 2 lbs carrots peeled and sliced
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
Glaze
  • 2 tbsp butter melted
  • 3 tbsp maple syrup pure
  • 4 slices bacon cooked and chopped
  • 1 tbsp fresh parsley optional

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Toss carrots with olive oil, salt, pepper, and garlic powder. Spread evenly on a baking sheet.
  3. Roast for 22–28 minutes, flipping halfway, until tender and caramelized at the edges.
  4. Stir together melted butter and maple syrup to create a glaze.
  5. Transfer roasted carrots to a bowl and toss with the maple butter glaze.
  6. Add chopped cooked bacon and stir to combine.
  7. Finish with fresh parsley if desired and serve warm.

Notes

For extra caramelization, broil the carrots for the final 2 minutes.
