Method
- Preheat the oven to 400°F (200°C).
- Toss carrots with olive oil, salt, pepper, and garlic powder. Spread evenly on a baking sheet.
- Roast for 22–28 minutes, flipping halfway, until tender and caramelized at the edges.
- Stir together melted butter and maple syrup to create a glaze.
- Transfer roasted carrots to a bowl and toss with the maple butter glaze.
- Add chopped cooked bacon and stir to combine.
- Finish with fresh parsley if desired and serve warm.
Notes
For extra caramelization, broil the carrots for the final 2 minutes.
