- Whisk olive oil, soy sauce, balsamic vinegar, lemon juice, garlic, parsley, thyme, paprika, salt, and pepper in a bowl.
- Add mushrooms to the marinade and toss to coat. Refrigerate for 30–60 minutes.
- Preheat grill to medium-high heat and oil grates.
- Thread marinated mushrooms onto skewers.
- Grill 8–10 minutes, turning occasionally, until mushrooms are tender and lightly charred.
- Brush with reserved marinade if desired and serve hot.
