  • 2 cans white beans cannellini or great northern, drained & rinsed
  • 0.33 cup extra-virgin olive oil
  • 1 lemon zest + 2 tbsp juice
  • 2 cloves garlic minced
  • 1 tbsp parsley chopped
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Optional Add-Ins
  • 1 tbsp capers
  • 2 tbsp sun-dried tomatoes chopped
  • 1 tbsp fresh basil
  • 0.25 cup feta cheese crumbled

Method
 

  1. Drain and rinse white beans; pat dry.
  2. Mix olive oil, lemon zest, lemon juice, garlic, parsley, oregano, salt, pepper, and red pepper flakes.
  3. Fold beans gently into the marinade.
  4. Let marinate at least 20 minutes or up to 24 hours.
  5. Taste and adjust seasoning before serving.
