- Prepare soft-boiled eggs: boil 6–7 minutes, cool in ice bath, peel and set aside.
- Season chicken with salt and pepper; sear in skillet with sesame oil 2–3 minutes per side.
- Make broth: sauté garlic and ginger in sesame oil, add chicken stock, soy sauce, coconut milk, and chili flakes. Simmer 5–10 minutes.
- Cook ramen noodles according to package instructions; drain.
- Slice cooked chicken; divide noodles into bowls and pour broth over.
- Add chicken, mushrooms, spinach, carrots; top with halved eggs, green onions, sesame seeds, and nori if desired.
- Serve immediately while hot.
Notes
Adjust chili flakes for spice level. Serve immediately for best texture.
