  • 2 chicken breasts boneless, skinless
  • 2 soft-boiled eggs halved
Broth & Noodles
  • 4 cups chicken stock
  • 1 cup coconut milk or heavy cream
  • 2 packages ramen noodles fresh or dried
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 0.5 tsp chili flakes optional
Vegetables & Garnish
  • 1 cup fresh spinach
  • 0.5 cup sliced mushrooms
  • 0.5 cup shredded carrots
  • 2 green onions sliced
  • to taste sesame seeds for topping
  • optional nori sheets for garnish

Method
 

  1. Prepare soft-boiled eggs: boil 6–7 minutes, cool in ice bath, peel and set aside.
  2. Season chicken with salt and pepper; sear in skillet with sesame oil 2–3 minutes per side.
  3. Make broth: sauté garlic and ginger in sesame oil, add chicken stock, soy sauce, coconut milk, and chili flakes. Simmer 5–10 minutes.
  4. Cook ramen noodles according to package instructions; drain.
  5. Slice cooked chicken; divide noodles into bowls and pour broth over.
  6. Add chicken, mushrooms, spinach, carrots; top with halved eggs, green onions, sesame seeds, and nori if desired.
  7. Serve immediately while hot.

Notes

Adjust chili flakes for spice level. Serve immediately for best texture.
