Ingredients
  

  • 1.5 cups chocolate sandwich cookies crumbled
  • 4 tbsp unsalted butter melted
  • 6 oz dark chocolate chopped
  • 8 oz cream cheese softened
  • 0.75 cup heavy cream cold
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries
  • 0.25 cup raspberry jam

Method
 

  1. Mix cookie crumbs with melted butter and press into serving cups. Chill.
  2. Melt dark chocolate and set aside to cool slightly.
  3. Beat cream cheese, powdered sugar, and vanilla until smooth. Mix in melted chocolate.
  4. Whip heavy cream to soft peaks and gently fold into chocolate mixture.
  5. Spoon mousse over cookie base and smooth tops.
  6. Mash raspberries and swirl with jam. Spoon over mousse.
  7. Chill at least 2 hours before garnishing and serving.
