Method
- Mix cookie crumbs with melted butter and press into serving cups. Chill.
- Melt dark chocolate and set aside to cool slightly.
- Beat cream cheese, powdered sugar, and vanilla until smooth. Mix in melted chocolate.
- Whip heavy cream to soft peaks and gently fold into chocolate mixture.
- Spoon mousse over cookie base and smooth tops.
- Mash raspberries and swirl with jam. Spoon over mousse.
- Chill at least 2 hours before garnishing and serving.
