Ingredients
  

Chicken Meatballs
  • 1 lb ground chicken
  • 1 egg
  • 0.33 cup parmesan grated
  • 0.33 cup breadcrumbs or almond flour
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
Garlic Butter Sauce
  • 4 tbsp butter
  • 4 cloves garlic minced
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 lemon juiced
  • 1 tbsp parsley chopped
Cauliflower Rice
  • 3 cups cauliflower rice fresh or frozen
  • 1 tbsp olive oil or butter
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp garlic powder

Method
 

  1. Mix ground chicken, egg, parmesan, breadcrumbs, garlic, Italian seasoning, paprika, salt, pepper, and olive oil.
  2. Form into 1–1.5 inch meatballs.
  3. Brown meatballs in a skillet on all sides, then remove.
  4. Melt butter and sauté garlic for the sauce; add paprika, lemon juice, salt, and parsley.
  5. Return meatballs to the pan and simmer 3–5 minutes.
  6. Cook cauliflower rice with oil, salt, pepper, and garlic powder.
  7. Assemble meal prep containers with cauliflower rice and meatballs.

Notes

Add broccoli, zucchini, or spinach for more volume. Use almond flour for low carb.
