Ingredients
  

Main Dish
  • 2 cups cauliflower rice
  • 2 chicken breasts diced
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 onion chopped
  • 1 cup cherry tomatoes halved
  • 0.33 cup olives sliced
  • 1 tsp paprika
  • 1 tsp oregano
  • 0.5 tsp cumin
  • 1 lemon juiced
  • 0.25 cup feta cheese optional

Method
 

  1. Heat olive oil and cook chicken until golden and fully cooked.
  2. Remove chicken and sauté onion and garlic.
  3. Add cauliflower rice and spices, cook until tender.
  4. Add tomatoes and olives, cook briefly.
  5. Return chicken to pan and mix well.
  6. Finish with lemon juice and garnish before serving.
