Ingredients
  

Chicken & Vegetables
  • 1 lb chicken breast thinly sliced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 zucchini halved and sliced
  • 1 red onion sliced
  • 1 cup cherry tomatoes halved
  • 0.5 cup kalamata olives sliced
  • 3 cloves garlic minced
Seasoning & Sauce
  • 2 tbsp olive oil
  • 1.5 tsp dried oregano
  • 0.5 tsp paprika
  • 0.25 tsp red pepper flakes optional
  • salt and pepper to taste
  • 1 lemon juiced
  • 0.25 cup chicken broth optional
Finish
  • 0.25 cup fresh parsley chopped
  • feta cheese optional, crumbled

Method
 

  1. Slice chicken and prepare all vegetables.
  2. Heat olive oil in a skillet and sear chicken with oregano, paprika, salt, and pepper until golden. Remove and set aside.
  3. Add more olive oil and cook bell peppers and red onion for 3–4 minutes.
  4. Add zucchini and garlic; sauté until crisp-tender.
  5. Add cherry tomatoes and olives, cooking until tomatoes soften slightly.
  6. Return chicken to skillet and toss with vegetables.
  7. Add lemon juice and optional chicken broth to create sauce.
  8. Finish with parsley and optional feta. Serve hot.

Notes

Slice chicken thin for fast cooking. Add feta for richness or serve with couscous for a full meal.
