Ingredients
  

Main
  • 2 Chilean sea bass fillets
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 lemon zest and juice
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup Kalamata olives sliced
  • 1 tbsp capers
  • 1 tsp oregano
  • 1 tbsp parsley chopped

Method
 

  1. Season sea bass with salt and pepper.
  2. Heat olive oil in skillet over medium-high heat.
  3. Cook fish 4–5 minutes per side until golden and flaky.
  4. Remove fish and sauté garlic in same pan.
  5. Add tomatoes, olives, and capers and cook briefly.
  6. Stir in lemon zest, juice, and oregano.
  7. Return fish to pan and spoon sauce over.
  8. Garnish with parsley and serve.

Notes

Use fresh fish for best flavor and avoid overcooking.
