Ingredients
  

  • 1.5 cups dried lentils rinsed
  • 1 cup onion diced
  • 2 cups carrots diced
  • 1 cup celery diced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 14.5 oz diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 bay leaf
  • 1 tbsp lemon juice fresh
  • 0.75 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup fresh parsley chopped

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Cook onion, carrots, and celery until softened.
  3. Add garlic, cumin, and paprika; stir until fragrant.
  4. Add lentils, tomatoes, bay leaf, and broth.
  5. Bring to a boil, then reduce to a simmer.
  6. Cook until lentils are tender.
  7. Remove bay leaf and season with salt and pepper.
  8. Stir in lemon juice before serving.
  9. Garnish with parsley and olive oil.

Add greens like spinach or kale for extra nutrition.
