  • 1 lb fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 0.5 cup ricotta cheese
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 2 eggs beaten
  • 2 tbsp fresh herbs dill or parsley, chopped
  • 12 sheets phyllo pastry
  • 0.33 cup olive oil or butter for brushing

Method
 

  1. Prepare spinach filling and cool.
  2. Layer and brush phyllo sheets.
  3. Fill, shape, and place on baking sheet.
  4. Bake until golden and crisp.
