Ingredients
  

Steak
  • 1.5 lbs flank steak or sirloin
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp oregano
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 lemon juiced
Bowl Base
  • 2 cups cooked rice
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.5 cup red onion sliced
  • 0.5 cup Kalamata olives sliced
  • 0.5 cup feta cheese crumbled
Tzatziki
  • 1 cup Greek yogurt
  • 0.5 cup grated cucumber squeezed dry
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 1 tbsp fresh dill

Equipment

  • Mixing bowls

Method
 

  1. Whisk marinade ingredients and coat steak. Marinate 20 minutes.
  2. Prepare tzatziki by mixing all sauce ingredients. Chill.
  3. Cook steak 4–5 minutes per side. Rest 5–10 minutes.
  4. Slice steak against the grain.
  5. Assemble bowls with rice, steak, vegetables, feta, and tzatziki.

Notes

For best flavor, marinate steak up to 4 hours. Store components separately for meal prep.
