Ingredients
  

  • 4 medium sweet potatoes
  • 1 can chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/3 cup kalamata olives sliced
  • 1/4 cup red onion finely chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp oregano
  • 1/2 tsp paprika
  • 1/3 cup feta cheese crumbled

Equipment

Method
 

  1. Roast sweet potatoes at 400°F (200°C) until tender.
  2. Mix chickpeas, vegetables, olive oil, lemon juice, and spices.
  3. Slice sweet potatoes lengthwise and fluff centers.
  4. Fill sweet potatoes with Mediterranean mixture.
  5. Top with feta and warm briefly if desired.
  6. Garnish with parsley and serve.

Notes

Serve warm or at room temperature for best flavor.
