Ingredients
  

  • 1.5 lb salmon fillets skinless
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 0.5 tsp ground cumin
  • 1 tsp dried oregano
  • 0.75 tsp salt
  • 0.5 tsp black pepper
  • 8 tortillas soft
  • 2 cups shredded lettuce
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 0.75 cup Greek yogurt
  • 2 tbsp tahini
  • 1 lemon juiced
  • 2 tbsp fresh parsley or dill chopped

Method
 

  1. Preheat oven to 400°F (200°C) or heat skillet over medium heat.
  2. Season salmon with olive oil, garlic, paprika, cumin, oregano, salt, and pepper.
  3. Cook salmon until just flaky and opaque.
  4. Whisk yogurt, tahini, lemon juice, garlic, and salt to make sauce.
  5. Warm tortillas and prepare vegetables.
  6. Flake salmon into large pieces.
  7. Assemble tacos with salmon, vegetables, sauce, and herbs.
