Mexican Ground Beef Casserole with Rice

Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 cup long-grain rice uncooked
  • 2 cups beef broth
  • 1 can diced tomatoes 14.5 oz
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • 2 tbsp taco seasoning
  • 2 cups shredded cheese Mexican blend or cheddar

Equipment

  • Large skillet
  • Baking dish
  • Foil

Method
 

  1. Cook onion and garlic in oil, add beef and brown.
  2. Stir in taco seasoning, rice, broth, and tomatoes.
  3. Add beans and corn and mix well.
  4. Transfer to baking dish and cover with foil.
  5. Bake at 375°F (190°C) for 35–40 minutes.
  6. Top with cheese and bake uncovered until melted.

Notes

Let rest before serving so the casserole sets properly.
