Ingredients
  

Melting Sweet Potatoes
  • 3 sweet potatoes sliced thick
  • 2 tbsp olive oil
  • salt and pepper to taste
Miso Glaze
  • 3 tbsp white miso paste
  • 3 tbsp butter melted
  • 2 tbsp maple syrup or honey
  • 1 tbsp soy sauce
  • 1 garlic clove minced
Garnish
  • sesame seeds for topping
  • green onions sliced

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Slice sweet potatoes and season with oil, salt, and pepper.
  3. Roast 20–25 minutes until edges brown.
  4. Whisk miso, butter, maple syrup, soy sauce, and garlic.
  5. Brush glaze over sweet potatoes.
  6. Roast 10–15 more minutes until caramelized.
  7. Add sesame seeds and green onions before serving.

Notes

Use white miso for mild sweetness; red miso creates a deeper, saltier glaze.
