Ingredients
  

Lentil Loaf
  • 1.5 cups cooked lentils
  • 1 tbsp olive oil
  • 1 onion diced
  • 1 carrot diced
  • 1 celery stalk diced
  • 3 cloves garlic minced
  • 0.75 cup breadcrumbs
  • 2 eggs
  • 2 tbsp tomato paste
  • 2 tbsp ketchup
  • 1 tbsp soy sauce
  • 1 tsp Worcestershire sauce vegetarian
  • 1 tsp smoked paprika
  • 0.5 tsp thyme
  • 0.5 tsp oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Glaze
  • 0.33 cup ketchup
  • 1 tbsp maple syrup
  • 1 tsp apple cider vinegar
  • 0.5 tsp smoked paprika

Method
 

  1. Preheat oven to 375°F (190°C) and prepare a loaf pan.
  2. Cook onion, carrot, and celery in olive oil until softened.
  3. Add garlic and cook for another minute.
  4. Mash lentils lightly in a bowl.
  5. Combine lentils with vegetables, breadcrumbs, eggs, and seasonings.
  6. Press mixture into loaf pan.
  7. Mix glaze ingredients and spread over the loaf.
  8. Bake for 40–45 minutes until firm.

Notes

Let the loaf rest before slicing so it holds together.
