- Preheat oven to 375°F (190°C) and prepare a loaf pan.
- Cook onion, carrot, and celery in olive oil until softened.
- Add garlic and cook for another minute.
- Mash lentils lightly in a bowl.
- Combine lentils with vegetables, breadcrumbs, eggs, and seasonings.
- Press mixture into loaf pan.
- Mix glaze ingredients and spread over the loaf.
- Bake for 40–45 minutes until firm.
Notes
Let the loaf rest before slicing so it holds together.
