Muffin Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.75 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 0.75 cup vegetable oil
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 cup grated carrots
  • 0.5 cup crushed pineapple drained
  • 0.5 cup raisins
  • 0.5 cup walnuts chopped
  • 0.25 cup shredded coconut optional

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin.
  2. Whisk dry ingredients together in a bowl.
  3. Mix sugars and oil, then add eggs and vanilla.
  4. Combine wet and dry ingredients gently.
  5. Fold in carrots, pineapple, raisins, nuts, and coconut.
  6. Divide batter into muffin cups.
  7. Bake 20–25 minutes until done.
  8. Cool and serve.
