Ingredients
  

  • 1 sheet puff pastry thawed
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 10 oz mushrooms sliced
  • 2 shallots thinly sliced
  • 4 oz goat cheese softened
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C). Prepare puff pastry on baking sheet.
  2. Cook shallots and mushrooms in oil and butter until golden.
  3. Mix goat cheese with herbs.
  4. Spread goat cheese on pastry and top with mushrooms.
  5. Bake until pastry is puffed and golden.

Notes

Serve warm or at room temperature.
