Ingredients
  

  • 4 cups mixed leafy greens
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 1 cucumber sliced
  • 1 avocado sliced
  • 2 tbsp fresh herbs parsley or cilantro
  • 2 tbsp sunflower seeds

Equipment

  • Large salad bowl
  • Small mixing bowl
  • Whisk

Method
 

  1. Wash and dry all greens thoroughly.
  2. Add greens, cabbage, carrots, and cucumber to a large bowl.
  3. Gently fold in avocado slices.
  4. Sprinkle herbs and seeds over the salad.
  5. Whisk dressing ingredients until emulsified.
  6. Drizzle dressing over salad and toss gently.

Notes

Add protein for a complete meal or keep it light as a detox side.
