Ingredients
  

Crust
  • 2 cups chocolate cookie crumbs
  • 0.5 cup unsalted butter melted
Chocolate Filling
  • 8 oz cream cheese softened
  • 1 box instant chocolate pudding mix
  • 1.5 cups cold milk
  • 1 tsp vanilla extract
  • 1.5 cups whipped topping
Coconut Pecan Topping
  • 1 cup sweetened shredded coconut
  • 0.75 cup chopped pecans
  • 0.5 cup brown sugar
  • 0.25 cup unsalted butter
  • 0.5 cup heavy cream
  • 1 tsp vanilla extract

Method
 

  1. Mix cookie crumbs with melted butter and press into pie dish.
  2. Beat cream cheese until smooth.
  3. Add pudding mix, milk, and vanilla; beat until thick.
  4. Fold in whipped topping.
  5. Spread filling into crust.
  6. Cook coconut, pecans, sugar, butter, and cream until thickened.
  7. Cool topping slightly and spread over pie.
  8. Chill at least 4 hours before serving.

Notes

Best chilled overnight for clean slices.
