Method
- Preheat oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
- In a large mixing bowl, combine peanut butter and brown sugar until well blended.
- Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
- In a separate bowl, combine oats, baking soda, and salt.
- Gradually add the oat mixture to the peanut butter mixture, stirring until just combined.
- Fold in M&M candies and chocolate chips until evenly distributed throughout the mixture.
- Press the mixture firmly into the prepared baking pan, spreading evenly to all corners.
- Bake for 20-25 minutes until the edges are lightly golden and the center is set.
- Allow to cool completely in the pan before cutting into bars.
- Cut into desired sizes and serve, or store in an airtight container.
Notes
For best results, use natural peanut butter and old-fashioned oats. Bars can be stored at room temperature for up to one week or frozen for up to three months.
