Ingredients
  

  • 2 lb beef chuck cut into chunks
  • 0.33 cup all-purpose flour
  • 3 tbsp oil
  • 1 cup onion chopped
  • 3 cloves garlic minced
  • 4 carrots sliced
  • 4 potatoes cubed
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1.5 tsp salt
  • 0.75 tsp black pepper

Equipment

  • Dutch oven or heavy pot
  • Wooden spoon
  • Chef's knife

Method
 

  1. Season and flour beef chunks.
  2. Brown beef in oil in batches; remove and set aside.
  3. Sauté onion and garlic in the same pot.
  4. Stir in tomato paste and cook briefly.
  5. Return beef to pot and add broth, bay leaves, and thyme.
  6. Cover and simmer for 90 minutes.
  7. Add carrots and potatoes; simmer 30 minutes more.
  8. Remove bay leaves, adjust seasoning, and serve.
