Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 cup mixed candied fruit
  • 0.5 cup raisins or chopped dates
  • 0.5 cup walnuts or pecans chopped

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. Cream butter and sugars until light and fluffy.
  4. Beat in eggs and vanilla extract.
  5. Gradually mix in dry ingredients until just combined.
  6. Fold in candied fruit, raisins, and nuts.
  7. Scoop dough onto baking sheets, spacing evenly.
  8. Bake 12–15 minutes until set and lightly golden.

Notes

Cookies improve in flavor after resting overnight.
