Ingredients
  

Custard
  • 2 cups whole milk
  • 1 cup heavy cream
  • 0.75 cup granulated sugar
  • 3 tbsp cornstarch
  • 0.25 tsp salt
  • 4 egg yolks large
  • 2 tbsp unsalted butter
  • 2 tsp vanilla extract
Layers
  • 4 ripe bananas sliced
  • 1 box vanilla wafer cookies

Method
 

  1. Whisk sugar, cornstarch, and salt in a saucepan. Slowly whisk in milk and cream.
  2. Cook over medium heat, stirring constantly, until thickened and gently bubbling.
  3. Temper egg yolks with hot mixture, then return to saucepan and cook 1–2 minutes.
  4. Remove from heat and stir in butter and vanilla until smooth.
  5. Layer vanilla wafers, banana slices, and warm custard in a serving dish.
  6. Repeat layers, finishing with custard. Chill at least 4 hours before serving.

Notes

For best flavor, use very ripe bananas and allow pudding to chill overnight.
