Ingredients
  

  • 2 lb chicken thighs bone-in, skin-on
  • 3 cups potatoes cut into chunks
  • 3 tbsp olive oil
  • 1 small onion sliced
  • 4 cloves garlic whole or smashed
  • 1 tsp paprika
  • 1 tsp dried oregano or thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 lemon cut into wedges
  • 2 tbsp fresh rosemary or thyme chopped

  • Large roasting pan or sheet pan
  • Mixing bowl
  • Knife
  • Cutting board

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, salt, pepper, paprika, and half the herbs.
  3. Spread potatoes in a single layer in a roasting pan.
  4. Season chicken thoroughly and place skin-side up among potatoes.
  5. Add onion and garlic around the pan.
  6. Roast uncovered for 45–50 minutes, turning potatoes halfway.
  7. Broil briefly if needed for crisp skin.
  8. Finish with lemon juice and fresh herbs before serving.

Notes

Do not overcrowd the pan to ensure proper roasting.
