- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, salt, pepper, paprika, and half the herbs.
- Spread potatoes in a single layer in a roasting pan.
- Season chicken thoroughly and place skin-side up among potatoes.
- Add onion and garlic around the pan.
- Roast uncovered for 45–50 minutes, turning potatoes halfway.
- Broil briefly if needed for crisp skin.
- Finish with lemon juice and fresh herbs before serving.
Notes
Do not overcrowd the pan to ensure proper roasting.
