- Heat olive oil in a large skillet over medium heat and cook the sausage until browned. Drain excess grease if necessary.
- Add the diced onion and sauté 2–3 minutes. Stir in garlic and cook for 30 seconds.
- Add tomatoes, Italian seasoning, paprika, pepper, and salt. Cook until tomatoes soften.
- Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
- Add the gnocchi, ensuring they are submerged. Simmer 6–8 minutes until tender and sauce thickens.
- Stir in spinach until wilted, then mix in Parmesan cheese.
- Taste and adjust seasoning. Serve warm with extra Parmesan if desired.

For extra creaminess, stir in an additional splash of cream before serving.
