  • 1 lb potato gnocchi
  • 1 lb Italian sausage mild or spicy
  • 1 tbsp olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 0.5 tsp black pepper
  • salt to taste
  • 2 cups fresh spinach
  • 0.5 cup grated Parmesan cheese

Method
 

  1. Heat olive oil in a large skillet over medium heat and cook the sausage until browned. Drain excess grease if necessary.
  2. Add the diced onion and sauté 2–3 minutes. Stir in garlic and cook for 30 seconds.
  3. Add tomatoes, Italian seasoning, paprika, pepper, and salt. Cook until tomatoes soften.
  4. Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  5. Add the gnocchi, ensuring they are submerged. Simmer 6–8 minutes until tender and sauce thickens.
  6. Stir in spinach until wilted, then mix in Parmesan cheese.
  7. Taste and adjust seasoning. Serve warm with extra Parmesan if desired.

Notes

For extra creaminess, stir in an additional splash of cream before serving.
