Ingredients
  

  • 1 lb ground beef
  • 1 cup long-grain white rice
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 packet taco seasoning
  • 1 can diced tomatoes undrained
  • 1 can black beans drained and rinsed
  • 1 cup corn
  • 2 cups beef broth

Equipment

  • Large pot or deep skillet
  • Wooden spoon

Method
 

  1. Brown ground beef in oil until cooked through.
  2. Add onion and garlic and cook until softened.
  3. Stir in taco seasoning.
  4. Add rice, tomatoes, beans, corn, and broth. Stir well.
  5. Simmer covered until rice is tender.
  6. Rest briefly, fluff, and serve with toppings.
