  • 12 oz elbow macaroni
  • 3 cups broccoli florets chopped small
  • 2 cups low-fat milk
  • 1 cup vegetable broth
  • 1.5 cups sharp cheddar cheese shredded
  • 0.5 cup plain Greek yogurt
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Large pot or deep skillet
  • Wooden spoon
  • Measuring cups
  • Cheese grater

Method
 

  1. Heat olive oil in a large pot and sauté garlic until fragrant.
  2. Add pasta, milk, and broth. Bring to a boil, then reduce to simmer.
  3. Stir frequently and cook 8–10 minutes.
  4. Add broccoli halfway through cooking and continue until pasta is tender.
  5. Reduce heat and stir in shredded cheddar until melted.
  6. Remove from heat and fold in Greek yogurt.
  7. Season with salt and pepper. Serve warm.

Notes

Stir frequently to prevent sticking. Add a splash of milk when reheating to restore creaminess.
