Ingredients
  

  • 6 bone-in chicken thighs
  • 1.5 lb baby potatoes halved
  • 1 red bell pepper sliced
  • 1 onion sliced
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 1 cup chicken broth
  • 1 tbsp smoked paprika
  • 1 tsp oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Large skillet or Dutch oven
  • Knife and cutting board
  • Wooden spoon

Method
 

  1. Season chicken with salt, pepper, and paprika.
  2. Brown chicken in olive oil until golden.
  3. Remove chicken and sauté onion and bell pepper.
  4. Add garlic and cook until fragrant.
  5. Add potatoes, broth, paprika, and oregano.
  6. Return chicken to pan.
  7. Cover and simmer until chicken is cooked and potatoes are tender.
