Ingredients
  

Base
  • 1 lb Italian sausage
  • 1 tbsp olive oil if needed
  • 1 onion diced
  • 4 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 1 tsp Italian seasoning
  • 0.5 tsp red pepper flakes optional
Soup
  • 4 cups chicken broth
  • 1 lb potato gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 0.5 cup parmesan grated

Method
 

  1. Brown sausage in a large pot over medium heat and drain excess fat.
  2. Add onion and cook until softened. Stir in garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  3. Pour in chicken broth and bring to a simmer. Add gnocchi and cook for 3–4 minutes.
  4. Stir in heavy cream, spinach, and parmesan. Simmer until spinach wilts and soup thickens slightly.
  5. Season with salt and pepper and serve with extra parmesan.

Notes

For extra richness, stir 1–2 tbsp sun-dried tomato oil into the soup.
