Method
- Brown sausage in a large pot over medium heat and drain excess fat.
- Add onion and cook until softened. Stir in garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes.
- Pour in chicken broth and bring to a simmer. Add gnocchi and cook for 3–4 minutes.
- Stir in heavy cream, spinach, and parmesan. Simmer until spinach wilts and soup thickens slightly.
- Season with salt and pepper and serve with extra parmesan.
Notes
For extra richness, stir 1–2 tbsp sun-dried tomato oil into the soup.
