Ingredients
  

Main Dish
  • 2 tbsp olive oil
  • 1 lb boneless chicken breast cut into pieces
  • 1 onion diced
  • 1 red bell pepper diced
  • 3 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 0.5 tsp oregano
  • 1 cup long grain white rice
  • 1 cup tomato sauce
  • 2 cups chicken broth
  • 1 cup mozzarella cheese shredded
  • 0.5 cup cheddar cheese shredded
  • 2 tbsp cilantro chopped

Equipment

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces and cook until lightly browned.
  3. Stir in diced onion and bell pepper and cook until softened.
  4. Add garlic, cumin, paprika, and oregano and cook until fragrant.
  5. Stir in rice, tomato sauce, and chicken broth.
  6. Bring to a simmer, cover, and cook until rice is tender.
  7. Sprinkle mozzarella and cheddar cheese over the top.
  8. Cover again and cook until cheese melts. Garnish with cilantro before serving.

Notes

For extra flavor add sliced green olives or serve with lime wedges.
