- Heat olive oil in a large skillet over medium heat.
- Add chicken pieces and cook until lightly browned.
- Stir in diced onion and bell pepper and cook until softened.
- Add garlic, cumin, paprika, and oregano and cook until fragrant.
- Stir in rice, tomato sauce, and chicken broth.
- Bring to a simmer, cover, and cook until rice is tender.
- Sprinkle mozzarella and cheddar cheese over the top.
- Cover again and cook until cheese melts. Garnish with cilantro before serving.
Notes
For extra flavor add sliced green olives or serve with lime wedges.
