Ingredients
  

  • 6 fresh bratwurst sausages
  • 2 large yellow onions sliced
  • 1 cup beer or chicken broth
  • 2 tbsp brown sugar
  • 2 tbsp vegetable oil
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • salt and black pepper to taste
  • fresh parsley for garnish

  • Tongs
  • Instant-read thermometer
  • Cutting board and knife

Method
 

  1. Preheat oven to 375°F (190°C) and position rack in center.
  2. Heat vegetable oil in large oven-safe skillet over medium heat.
  3. Add sliced onions and cook 8-10 minutes until softened and translucent.
  4. Sprinkle brown sugar, thyme, garlic powder, salt, and pepper over onions and stir to combine.
  5. Nestle bratwurst into onion mixture in single layer.
  6. Pour beer or broth around sausages without washing off onions.
  7. Transfer skillet to oven and bake uncovered for 20 minutes.
  8. Remove from oven, flip each bratwurst, and return to oven for 15-20 minutes until deeply browned and internal temperature reaches 160°F.
  9. Optional: Increase temperature to 425°F during last 5 minutes for extra caramelization.
  10. Let rest 3-5 minutes before serving with caramelized onions on top.

Notes

For best results, use fresh bratwurst with natural casings. Don't pierce sausages before cooking to retain juices. Serve with mustard, sauerkraut, or on toasted hoagie rolls.
