Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1 bag tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 0.5 cup black beans drained and rinsed
  • 1 cup diced tomatoes
  • 1-2 jalapeños sliced
  • 0.5 cup sour cream
  • 0.5 cup guacamole
  • 0.25 cup chopped cilantro
  • 0.25 cup green onions sliced
  • lime wedges for serving

Equipment

  • Large baking sheet
  • Skillet
  • Mixing spoon

Method
 

  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
  2. Cook beef with onion and garlic until browned. Stir in taco seasoning and a little water. Remove from heat.
  3. Layer half the chips on the sheet, top with beef and cheese. Repeat with remaining chips, beef, beans, and cheese.
  4. Bake for 7–10 minutes until cheese melts and edges crisp.
  5. Top with tomatoes, cilantro, green onions, guacamole, and sour cream. Serve hot with lime wedges.

Notes

For vegetarian nachos, skip the beef and add corn, peppers, or refried beans.
